Röst began, as many good things do, as a passion that got a little out of hand.
It started with a trip to Kent Estate in Coorg. Standing among the misty, shade-grown hills of the Western Ghats, Divya and Nalini saw firsthand the immense human labor, soil science, and patience that go into every single bean long before it ever finds its way into a bag. They returned to Jaipur completely transformed.
In early 2026, curiosity turned into action when they impulse-bought an Aillio Bullet drum roaster. Their grand entry into specialty coffee was a smoke-filled trial by fire; the first few batches were, by their own cheerful admission, thoroughly burnt, oily, and charred.
Rather than giving up, they dove into an intense crash course in coffee roasting. They picked up the phone, reached out to experienced estate managers, green buyers, and cuppers across the country, and found an amazingly welcoming Indian specialty coffee community eager to share its knowledge.
Batch after batch, they logged heat curves, measured development times, and tweaked variables. Slowly but surely, burnt beans gave way to sweet, vibrant, and consistent roasts. What started as an obsession between a mother and daughter quickly outgrew their countertop—and Röst was born.
