The Siphon, or Vacuum Pot, is part brewing device, part theatrical science experiment. Utilizing vapor pressure and vacuum suction across two glass globes, it brews coffee through total immersion before rapidly drawing it down through a filter. The result is a cup of incredible clarity, velvety warmth, and intense aromatic complexity.
Here is our step-by-step guide to mastering the Siphon at home.
What You’ll Need
-
Siphon Brewer (Lower Globe, Upper Chamber, Cloth or Paper Filter)
-
Heat Source (Butane Burner or Alcohol Lamp)
-
Freshly Roasted Coffee Beans: 25g (Medium grind, like table salt)
-
Hot Water: 375ml (Preheated) & Timer / Stirrer
Step-by-Step Instructions
1. Prep the Filter & Base
Soak your reusable cloth filter in warm water, secure it into the bottom of the upper glass chamber, and hook the spring chain tightly into the siphon tube. Fill the lower globe with 375ml of preheated hot water.
2. Apply Heat
Place the upper chamber loosely on top of the globe (do not seal yet). Place your burner under the lower vessel. As the water begins to boil, firmly seal the upper chamber into the lower globe.
3. The Water Rise & Coffee Addition
Vapor pressure will force hot water up the tube into the upper chamber, leaving a tiny bit behind in the lower globe. Reduce your burner heat slightly. Add 25g of medium-ground coffee into the upper chamber and stir gently to saturate all grounds.
4. Steep & Extinguish
Let the coffee steep for 45 seconds. Give it another gentle stir, then extinguish and remove the heat source completely.
5. The Vacuum Drawdown
As the lower globe cools, a vacuum forms, pulling the brewed coffee rapidly back down through the filter. The grounds will form a neat dome in the upper chamber. Once all liquid has drawn down, gently rock the upper chamber to remove it and serve.
Pro Tips for the Best Cup
-
Control the Heat: Keep the flame low once the water rises so you don't scorch the brewing coffee with excessively high temperatures.
-
Filter Care: If using a cloth filter, store it in a sealed container of water in your fridge after washing to keep it clean and odor-free.
